Warm weather calls for cold treats.  Honestly even if it’s cold outside this is the perfect treat if you’re craving sweets or want to treat yourself after a workout.  Say hello to my easy peezy Vegan Strawberry Banana Ice Cream! Yes. You read that right. You can have ice cream and be healthy. Don’t worry – this ice cream is easy on the tummy and yummy on the taste buds.

You can essentially use any fruit to make this ice cream but for this particular recipe, start by freezing 2 cups of strawberries and 1 banana in zip lock bags for 2-3 hours. I make sure the fruit lays flat in the zip lock bags before putting them into the freezer.

Next add frozen fruit to your food processor or blender, slowly blend the frozen fruit, maple syrup and cinnamon. I usually let the processor/blender pulse for 20-30 seconds at a time so that I don’t liquify the fruit. Blend as long as needed until you get a smooth frozen consistency similar to below.

Next use a mini scooper to transfer ice cream to bowls, top with additional fruit and enjoy!
