One of my favorite desserts (like something I could eat it everyday) are brownies. *hands up* Transitioning to a vegan and plant-based lifestyle, has been a wonderful experience, but to be honest there are some meals and desserts that I’ve avoided because I didn’t know how to remove the dairy from them.  I’m on a mission to make some of my  favorites their plant-based or vegan.  So happy to tell you all about these delicious No-Bake Peanut Butter Vegan Brownie Bites.

Yes, I know what you’re thinking — so much awesome in those 6 words.  What’s even better is that you only need 5 ingredients and there’s no baking involved!  It’s like all the indulgence, all the ease and no-guilt! Hope you enjoy them as much as I do!

So here’s what you need:

Ingredients (for Brownie):

  • 3/4 cups walnuts
  • 3/4 cup raw almonds
  • 2 cups dates, pitted (if dry, soak in warm water for 10 minutes then drain)
  • 3/4 cup cocoa powder (I picked up mine at Sprouts)
  • 1 tablespoon cup peanut butter (I used Wild Friends for this recipe)
  • 1/4 tsp sea salt
Ingredients for topping:
  • So Delicious Lite Cocowhip (dairy-free and all the yumminess)
  • chopped walnuts

Instructions:

Step 1: Add walnuts and almonds to food processor and blend until smooth.

Step 2:  Add the cacao powder and sea salt and pulse to combine. Transfer to bowl and set aside.

Step 3: Add the dates to the food processor and process until small bits remain. Remove and set aside.

Step 4: Add nut and cocoa mixture back into food processor and while processing, drop small amounts of the date mixture into the food processor or blender.

Step 5: Process until a dough consistency is achieved, adding more dates if the mixture does not hold together when squeezed in your hand.

Step 6: Add the brownie mixture to a small parchment lined 8×8 dish and before pressing and then press down with hands until it is flat and firm. I pressed my hands on semi-wet napkin from time to time to  prevent sticking and get it really flat.

Step 7: Place in freezer or fridge to chill for 20 minutes.

Step 8: Once you remove them drizzle the peanut butter topping on the brownies and use a small spatula to create a swirling effect. Place in the freezer to set for 10 minutes.

Step 9: Remove the brownies from the parchment paper and slice into even squares.

Step 10: Then top with additional crushed raw walnuts and a dollop of So Delicious Cocowhip.
